Red fish with orange sauce in the oven

Preparation:

Squeeze the juice from the orange. Remove the pips, if there are any.

Mix the juice with honey. Bring to a boil and simmer for 3-5 minutes over moderate heat. Combine with the soya sauce and cool slightly.

Salt and pepper the fish. Place skin-side down on an oiled baking tray and cover with the sauce (using a cooking brush is best).

Send to a preheated oven at 180°C for about 15-20 minutes.

Baking time may vary depending on the size of the pieces.
